Following a walking farm tour of our dairy farm, you'll come inside The Fork kitchen, where you will receive a hands-on education in fresh cheese making from Chef Instructor Mary Karlin. Mary will first demonstrate pasteurization and then you’ll taste, sample and discuss the styles and flavors of different fresh cheeses. After a farm fresh lunch catered by The Fork, you’ll partner with other students to make your own cheeses, --with enough to share and take home! You will make: Panir, Ricotta, Same Day Mascarpone, and Chevre. (Chevre will be finished at home.) Your day at the farm will culminate with a creamery conversation, relaxing glass of wine and focused tasting of Point Reyes Farmstead Cheeses led by Mary and Head Cheese Maker, Kuba Hemmerling. Mary’s new book will be available for purchase.
